Jeff’s dad already has Thanksgiving plans, so it’s just the two of us this year. Jeff just went and picked up our turkey, which is huge. Especially for two people. And so I called my mom and asked her for instructions on how to make turkey noodle soup with the leftovers… and here are the directions for anyone else who might be interested!
Put your leftover turkey meat in a pot and cover with water.
Add some salt, the bullion cubes (2 should be plenty), and about a cup of cut up celery stalks to the water.
Let that cook for awhile the longer the more flavorful but not to the point that the water evaporates (if this happens add some more water).
Don’t keep it boiling, turn the heat down after it starts to boil so that the water is just simmering not a full rolling boil.
About a half hour to forty five minutes before you want to eat the soup add cut up carrots – as many as you want in your soup.
If you are adding noodles they should go in the last 10 minutes of cooking time. They cook fast – if they are in it for too long they will get soggy.
I have had this soup before and can vouch for it’s yumminess, so if you’ve got leftovers – I say try it!
In other news… there is a Shrek Christmas Special on TV next week! Wednesday at 8pm, on ABC. Watch it! I wrote it on my calendar, so hopefully I will for sure remember! And it’s cleverly called… Shrek The Halls!
